Ingredients

For the rum and raisin ice cream

  • 150g/5½oz raisins
  • 50ml/2fl oz dark rum
  • 300ml/½ pint pouring double cream
  • 1 x 397g tin full-fat condensed milk

For the glazed pineapple

  • 1 medium ripe pineapple
  • 3 tbsp light muscovado sugar
  • 3 tbsp rum
  • ½lime, juice only
